It’s good to be King, okay for Dale DeGroff  it’s probably fantastic! I met this man, known nationwide as the “King of Cocktails” at the Halekulani Resort in Oahu when he was giving a special class to guests teaching us how to make unique, beautiful and tasty cocktails. He says it’s all about trusting yourself to follow the directions, patience and persistence…practice makes perfect! Here’s one of Dale’s delicious recipes that’s perfect to help celebrate Christmas.

Poinsettia:

Here’s a simple drink to make that will help everyone get into the holiday spirit! You can use a demi-sec or dessert sparkling wine as an alternative to Champagne. Cheers!

3 ounces cranberry juice
4 ounces Champagne (or see above)
1/2 ounce Cointreau

Method: Pour cranberry juice into a champagne flute and fill with Champagne. Top with a float of Cointreau.  I’ve tried this using a red sugar rimmed martini glass and it was a huge hit!Cheers! More of Dale’s cocktail recipes tomorrow.
