I always love a good Mimosa but when I’m making them at home I’m never sure the kind of champagne to use. I don’t want to use the ultra cheap stuff but don’t want to spend hundreds on a champange that’s only going to be mixed with orange juice. I got some great answers from some pros and even a few recipes in case you want a twist on the traditional and want to try a ”Valencia”. 

 After talking with several top mixologists, on my TRAVEL THERAPY quest, I’ve learned when choosing your champagne for a Sunday Brunch drink like a mimosa or a Bellini you’re best off choosing a brand like Moet and Chandon White Star (runs around $40) that has a clean, refreshing taste that mixes well in a cocktail, still offers a classy taste, without cleaning out your pocketbook!     

Here are two of my favorite recipes from one of my favorite mixologists that I met in Hawaii, the King of Cocktails, Dale DeGroff. Thanks again, Dale!

 DALE’S MIMOSA ( QUICK AND EASY)
2 oz. Fresh Orange Juice
4 oz. Champagne

Pour orange juice into a champagne glass and fill with champagne. A float of Cointreau is an appealing extra for a special drink. Note: This drink was also known as a Bucks Fizz.

 ALTERNATIVE MIMOSA “ VALENCIA”Dale says Frank Meier of the Ritz Hotel had an alternate recipe for the Mimosa called the Valencia: (not to be confused with the Valencia Martini) here it is.1 oz. Orange Juice
1 oz. Apry Liqueur from Brizzard
Fill with Champagne
Voila! The perfect Sunday drink.
