As I’m headed out this Easter Sunday in search of the perfect Bellini and Mimosa Recipes I thought I’d share a favorite signature cocktail recipe straight from one of the most exclusive private islands in the Caribbean…  This fantastic tropical drink recipe came straight from one of the bartenders at the ultra luxurious Jumby Bay Resort, just off of Antigua, and it’s just one of Jumby’s fantastic drink recipes! 

Because this is an all-inclusive luxury property one of the nice perks is unlimited cocktails and these little beauties are created specifically for Jumby Bay and with the impeccable service you don’t even have to leave your beach chair…the drinks will come to you! Yes, dangerous I know but at least there are no cars on Jumby. If you want to get around on this tiny slice of paradise you have to ride a bicycle or call for a golf cart chauffer.

So here you go, the recipe to the Jumby Jamboree, in case you want to try it home while you’re dreaming of the Caribbean or hopefully getting ready to visit! Cheers! 

JUMBY JAMBOREE  

INGREDIENTS: 

Shot of Baileys

Shot of Coconut Cream

1 Whole Banana

4 spoons of ice cubes

INSTRUCTIONS 

Combine all the ingredients in a blender and blend for about 20 seconds and then pour into a tall drink glass and garnish with a slice of pineapple and a straw. Oh, and don’t forget adding one of those cute little umbrellas for a true taste of being on vacation…
