It was truly an honor to be part of a historic event last night at the Waldorf Astoria New York picking the next signature dish for the iconic hotel and resort brand. What I love about this Taste of Waldorf event is how master chefs from Waldorf properties around the world are paired with James Beard Rising Star Semi-finalists to create incredible dishes that will join Waldorf’s famous creations Eggs Benedict, Waldorf Salad and Red Velvet Cake.

The competition was impressive and the judging delicious! I the end, the winner, this beauty, the Jing Roll, with Chinese Nappa Cabbage wrapped around Wagyu Beef with Black Mushrooms, Chinese Chili Peppers, Hoisin Sauce, Okra, Sweet Purple Potatoes and Local Salted Duck Eggs.
